What to do with all those shrooms?! If you’ve found yourself literally swamped in Oyster mushrooms since they’ve started to flush from your mushroom kit and can’t seem to eat them fast enough, maybe all you need are more delicious recipe ideas. At Logro Farms we’re always trying out new ways of making our mushrooms appetizing and irresistible. We think our Sweet and Spicy Sautéed Mushroom Tacos will be a mouthwatering option that’ll keep you coming back for more.
Sweet and Spicy Sautéed Mushroom Tacos
1 tbsp. honey
1 tbsp. olive oil
1 tsp. lemon juice
1 tsp. soy sauce
½ tsp ground chipotle pepper
1 cup sliced mixed green and red bell peppers
1 lb. oyster mushrooms cut into strips
8 flour or corn tortillas
Pico de gallo
1. Mix honey, lemon juice, soy sauce, olive oil and ground chipotle pepper in a medium bowl. Add sliced oyster mushrooms and coat with sauce mix then let sit for 10 minutes.
2. Heat skillet on high heat and add mushroom mix and sliced peppers. Stir fry until mushrooms and peppers are tender (about 3-5 minutes) then remove from skillet.
3. Arrange tortillas on a plate and sprinkle with shredded lettuce and Pico de Gallo.
4. Add mushroom and peppers to the tortillas and top with a dollop of sour cream to taste.
