If you haven’t heard of microgreens, don’t worry – their visibility has only increased within the past few years as studies from the American Society for Horticulture and Science and the U.S. Department of Agriculture were published analyzing the nutrient composition of commercially available microgreen varieties.
What Are Microgreens, Exactly?
Microgreens are young seedlings of edible vegetables and herbs harvested less than 14 days after germination. They are usually about 1-3 inches longs and some contain up to 40 times higher levels of vital nutrients like vitamin C, vitamin E, Vitamin K and beta carotene than their mature plants. Because microgreens are harvested right after germination, all the nutrients they need to grow are still intact. They are harvested during the time they contain the highest nutrient content.
